This looks so good, and very different! I love the addition of vinegar to potato salads. Definitely gives it an extra zip!

This is such pure comfort food to me- I love everything about it. The colors of the potatoes, the bacon, the roasting with the onions. If I could find some interesting potatoes here in Norway, I would totally make this. Then again, maybe I’ll just make a boring- one potato variety of it.
