When I was in Jordan last year, my guide explained to me that they often add Sumac to Hummus because the spice helps to balance the gas the the beans in Hummus produce.

&lt;em&gt;I didn&#039;t know that! Thanks for sharing the information. Now sumac is almost a necessity, especially if you are going to serve it to a big group of people ;) - Karen&lt;/em&gt;</description>

Laura: The east coast has some really wonderful markets, you are lucky! And I bet they sell the *best* seafood. Kansas is ocean-deficient, so seafood is usually thawed from frozen.
